The Yellowfin Tuna owes its name to the characteristic yellow colouration on the tip of its fins; its average weight is around 40 kg and its average length is just over a metre. It has pink flesh with darker streaks and lives in shoals. It is a pelagic and highly migratory species. It is excellent as an appetiser, easy and quick to prepare even in advance, it is a light dish with a special flavour, ideal for those who want to eat with taste, but without weighing themselves down.
